4-6 Grouper filets
2 qts. chicken stock or broth
1 cup flour
1 cup white wine
1 TBS. sea salt
1 cup white onion
1 cup Jalepeno peppers (modify)
2 cloves Garlic
2 cups fresh parley leafs
½ cup olive oil


Take a large sauté pan and add ½ cup of olive oil.  Once oil is heated, place chopped white onion, chopped Jalapeño pepper, chopped garlic, and salt then sauté until the contents are soft.  Add 1 cup of flour and stir constantly to make a rue. Add chicken stock and a cup of wine, bring to a boil then reduce heat and simmer for 5 minutes until the sauce begins to thicken. Add a cup of chopped parsley into the pan and mix.  When the contents turns a nice light green color, place the Grouper filets into the pan and cook four minutes on each side making sure to be careful when turning the filets, not to break them.  When finished, place the fish over a bed of rice and pour the green sauce over the fish.
